When we were at the peak of our food intolerance/allergy journey, we all missed out on so much as we couldn't regularly find products that covered all our food challenges. What was available in the supermarkets was often too expensive for us to buy regularly as a family of 6 so we learned to make our own versions of all our favourites. It often worked out to be healthier and super fun (mums read messy if baking with the kids too!)

Digestive Baking Day

We had a baking day last week, making digestives in preparation for a yummy cheese cake (recipe to follow on another post). All the ingredients are available in normal supermarkets. (some were out of stock so had to order them online this time)

Ingredients

70g gluten free oats
100g gluten free plain flour
1/4 tsp bicarbonate of soda
1/4 tsp salt
35g coconut sugar
75g coconut oil
1 tbsp plant milk
1 tbsp maple syrup

Method

Preheat the oven to 180°C/360°F and line a large baking sheet.
Blend the oats to a powder.
Rub the coconut oil into the flour and sugar until its a crumbly biscuit dough.
Add plant milk and maple syrup and mix with a fork until the dough comes together.
Roll on a floured surface until around 3mm in thickness.
Cut and place the rounds on baking sheet leaving around 1cm between the for expansion.
Bake for 12-15 minutes until they are just turning golden at the edges.
Allow to cool completely and to turn them into chocolate digestives, spread them with melted chocolate and let that harden before serving.
